Lemongrass is a fast-growing tropical grass prized across Southeast Asian, Caribbean, and African cuisines for its bright, lemony flavor without the acidity of actual citrus. The tender inner stalks are sliced, bruised, or ground into curries, soups, teas, and marinades, while the leaves infuse broths and cocktails with a clean, grassy fragrance.
Beyond the kitchen, lemongrass earns its keep in the garden as a bold, clumping ornamental that can reach 4-5 ft in a single season. Its dense form makes it a useful privacy screen or accent planting, and the natural citronellal content in its leaves offers mild mosquito-repelling properties when crushed.
Planting & care
Start lemongrass from divisions or nursery transplants rather than seed, as germination is slow and unreliable. Plant after all frost danger has passed in a spot with at least 6-8 hours of direct sun and well-draining, moderately fertile soil. Space clumps 3-4 ft apart to allow for generous spread. In containers, choose a pot at least 12 in wide with drainage holes and use a quality potting mix.
Water consistently during the growing season, keeping soil evenly moist but never waterlogged. Feed monthly with a balanced or nitrogen-forward fertilizer to support vigorous leafy growth. In Zones 9-11, cut clumps back to about 6 in in late winter to encourage fresh growth. In colder zones, bring containers indoors before the first frost and overwinter in a bright, warm spot with reduced watering.
Harvest from the Outside In
Always harvest the outermost stalks first, cutting or snapping them off at soil level. Leave the central stalks intact so the clump keeps producing through the season. Once cut, stalks keep in the refrigerator for up to two weeks, or freeze them whole for months of use - no blanching required.
